The spirits-and-cocktail arm of Cloudcroft Brewing Company — a small adjoining room next door pouring three house-made spirits and cocktails built around in-house and other New Mexican distilled spirits.

What I'd order

Your first visit
"A Mountain Smoke Whiskey pour, neat. The whiskey is made in the building next door — the lowest-friction way to taste what the program actually is."

Mountain Smoke, neat

Across the line-up
"Ask at the bar whether they'll pour a sampler of all three house spirits. Whiskey, vodka, gin in one round is the honest comparison."

Three-spirit taste

Cross-room evening
"A house-spirit cocktail at the Distillery, then a wood-fired pizza next door. The building is built for the round-trip; live music four nights a week is the kicker."

Cocktail + brewery pizza

Decision aid

Good for · skip if

What this room actually does well, and when to aim somewhere else.

Good for

  • A pour of a real local spirit — Mountain Smoke, Skywater, or Mountaintop
  • Cocktails built around in-house and New Mexican spirits
  • Cross-room evenings — drinks here, wood-fired pizza next door
  • Take-home bottles of the three house spirits
  • Live-music-with-a-cocktail nights (music in the connected brewery room)
  • Private-event planners — ask about the planned upstairs room

Practical notes

How “connected but separate” actually works

The Distillery occupies the adjoining building next door to Cloudcroft Brewing Company, with connected access between the two spaces. The Distillery bar serves spirits, cocktails, beer, and wine; the brewery side serves food (wood-fired pizza, with April 2026 additions of tacos, chips and guacamole, and a dessert program).

Practically: one address (1301 Burro Ave), one phone, one ownership group. You can drink at the Distillery and order food next door without leaving the complex.

Hours, holidays & the “Distillery-specific” uncertainty

The brewery's posted hours (Mon/Wed/Thu/Sun 11–9, Fri/Sat 11–10, closed Tue) cover the complex. Closed Thanksgiving and Christmas Day; Christmas Eve runs 11 AM – 4 PM.

Distillery-specific hours haven't been separately published as of May 2026. If the Distillery side opens later, closes earlier, or differs on event nights, that detail isn't on the brewery site or any sourced listing. For a time-sensitive visit, call (575) 682-2337 to confirm.

House spirits & the cocktail program

Three in-house spirits are confirmed: Mountain Smoke Whiskey, Skywater Vodka, Mountaintop Gin. Bottles are available to take home (prices not published — ask at the bar).

Per the Cloudcroft Reader (Oct 2024), the Distillery bar pours “beer, wine, and cocktails crafted with in-house and New Mexican distilled spirits.” A specific cocktail list isn't published — the program exists, but the menu lives at the bar.

Live music, karaoke & the connected brewery room

The brewery side runs a regular music schedule that the Distillery room hears from next door: karaoke Mondays 6–9 PM, live music Fridays 6–9 PM, Saturdays 6–9 PM, Sundays 1–4 PM. The Instagram account promotes specific acts.

Ownership, people & how the Distillery came together

Cloudcroft Brewing Company's co-owners are Matt Willett, Jim Maynard, and Cody Castello. The brewery opened in June 2018 in a former Cloudcroft firehouse. Head brewer is Denver Weise. Original/early master brewer was Kasey Bigbee (per LasCruces.com 2020 feature).

The Distillery adjoining build-out was reported by the Cloudcroft Reader in October 2024 as a new adjoining building expanding indoor seating, with a planned upstairs room for private events including its own bar, bathrooms, and balcony. Construction status as of May 2026 isn't separately verified, but the room is operating per Discover Cloudcroft's April 2026 local-input note.

Michael Kline has been associated with the Distillery via an Instagram tag at “The Distillery at Cloudcroft Brewing” (post `DEIATm9P0DO`), but a specific role (head distiller, manager, owner of the Distillery as a separate entity?) isn't confirmed.

What we couldn't verify — for a future update

Open questions from the source MD (May 22, 2026) that this page doesn't fabricate around:

  • Distillery-specific hours (does the bar keep different hours from the brewery?)
  • Michael Kline's exact role with the Distillery
  • A dedicated cocktail list — confirmed to exist, not published
  • Construction status and exact opening date of the adjoining Distillery building
  • Liquor-license / legal-entity name (likely held under Cloudcroft Brewing Company LLC or similar, not verified)
  • Bottle pricing and retail availability beyond “take-home bottles on site”

Editor's take

"The Distillery is the spirits-and-cocktails punctuation mark on Cloudcroft Brewing — three real house spirits made in the building next door, a cocktail program that uses them, and the music and food a few steps away. The published record is thin (cocktail list and Distillery-only hours aren't online yet), but the room exists and the drinks are real per local input. Order the Mountain Smoke, ask what's on the bar, and let the brewery feed you."
